Best Hummingbird Cake Recipe: Moist 3-Layer Tropical Cake

Welcome to my kitchen, friends. Today, we’re baking something truly special.

I’m talking about my all-time favorite Hummingbird Cake. Three gorgeous layers, packed with flavor, and finished with the fluffiest cream cheese frosting you’ve ever tasted. The kind of cake that makes people go quiet at the table. You know that silence. That’s the good kind.

If you’ve never had Hummingbird Cake before, think of it as the tropical cousin of carrot cake. Instead of grated carrots, we’re working with sweet, mashed bananas. We fold in crushed pineapple and toasted pecans. And the smell coming out of your oven? Absolutely irresistible.

    This cake is perfect for:

    • Birthday celebrations
    • Holiday dinners
    • A special weekend treat when you want to slow down and bake with love

What Makes This Recipe So Good

Here’s the thing. A lot of Hummingbird Cake recipes exist out there. But this one is different, and it comes down to a few smart baking decisions.

We use oil instead of butter. Oil stays liquid at room temperature. That means your cake stays moist for days, not just hours. Butter-based cakes dry out faster. Oil-based cakes? They just keep getting better.

We add cornstarch to the flour. This is a classic baker’s trick. Cornstarch tenderizes the all-purpose flour and gives you that soft, fluffy, bakery-style crumb that just melts in your mouth.

We use two kinds of sugar. Granulated sugar for sweetness. Brown sugar for a deep, rich molasses note that pairs beautifully with the cinnamon and nutmeg.

We use coarse salt. I’m serious about this one. Coarse salt gives you tiny little pops of flavor throughout the cake. It cuts through the sweetness and makes every bite more interesting.

How to Bake It: Step-by-Step Instructions

Got everything measured and ready? Good. Let’s get into it.

Baking has a rhythm to it. Follow the steps, enjoy the process, and don’t rush. This is a weekend project. That’s a good thing.

Step 1: Prep Your Oven and Pans

Preheat your oven to 350 degrees Fahrenheit.

Grab three 9-inch round cake pans. Grease the insides thoroughly with butter or non-stick baking spray. Then cut three circles of parchment paper and press one into the bottom of each pan.

This one small step saves you so much heartache later. Your cake layers will slide out perfectly every single time.

    Step 2: Toast the Pecans

    Don’t skip this. Please.

Spread your chopped pecans in a single even layer on a rimmed baking sheet. Pop them into your preheated oven for exactly five minutes. Keep an eye on them, because they can go from toasted to burnt very quickly.

Toasting releases the natural oils inside the nuts. The flavor deepens. The crunch gets better. It makes a noticeable difference in the finished cake.

Remove them from the oven and let them cool completely before you use them.

Step 3: Mix the Dry Ingredients

    Grab your largest mixing bowl.

Add the following and whisk them together until completely combined:

    • All-purpose flour
    • Coarse salt
    • Baking soda
    • Baking powder
    • Ground cinnamon
    • Ground nutmeg
    • Cornstarch
    • Granulated sugar
    • Packed brown sugar

Use a large wire whisk and really work out those brown sugar clumps. You want a uniform, sandy mixture with no lumps hiding in the corners. Set this bowl aside.

Step 4: Prepare the Wet Ingredients

In a separate large bowl, peel your ripe bananas and mash them aggressively with a sturdy fork. You want it smooth and almost soupy. A few tiny lumps are totally fine. Don’t stress about perfection here.

Crack all six eggs directly into the mashed bananas and whisk vigorously until the yolks are fully broken and everything is combined.

Now pour in your neutral oil and vanilla extract. Open the can of crushed pineapple and pour the entire contents into the bowl, juice and all.

    Do not drain it.

That pineapple juice is liquid gold. It adds incredible flavor and keeps the cake wonderfully moist. Whisk the whole wet mixture together until it looks smooth and emulsified.

Step 5: Combine Wet and Dry

Pour your wet ingredients into the bowl of dry ingredients.

Add 1 and 3/4 cups of your cooled toasted pecans. Save the remaining quarter cup to decorate the top of the finished cake later.

Now grab a flexible silicone spatula and fold everything together gently. Use big, slow, sweeping motions. Scrape the bottom and sides of the bowl as you go.

Stop the moment the white flour streaks disappear.

I mean it. Put the spatula down. Over-mixing builds up tough gluten strands, and that makes a dense, chewy cake instead of a soft, tender one. Less is more here.

    Step 6: Bake the Cakes

Divide your batter evenly among the three prepared cake pans. Smooth the tops lightly with your spatula.

Place all three pans on the middle rack of your oven.

Bake for 30 to 32 minutes. You’ll know they’re done when:

    • The centers feel just firm to a gentle touch
    • The edges are nicely browned
    • The sides are pulling away slightly from the pan

Remove the pans from the oven. Let the cakes rest in their pans for 10 minutes. Then carefully invert them onto wire cooling racks and peel off the parchment circles.

Now comes the hard part: waiting.

Let the layers cool completely to room temperature. This usually takes about two hours. I know it’s tempting to rush. But if you frost a warm cake, your beautiful cream cheese icing will melt into a sad, runny puddle. Patience here pays off big.

Step 7: Stack, Frost, and Finish

Once the layers are completely cool, use a long serrated knife to carefully slice off the rounded dome from the top of each layer. This gives you a flat, even surface for stacking. The cake will look so much more polished when it’s done.

Place your first layer on a serving platter. Spread a thick, generous layer of cream cheese frosting across the top. Add the second layer and repeat. Top with the final layer.

Frost the entire outside of the cake. Don’t be shy with the frosting.

Finally, sprinkle your reserved toasted pecans across the top for a beautiful, rustic finish.

    How to Store Your Cake

Because of the cream cheese frosting, this cake needs to live in the refrigerator.

Cover it with a cake dome, or press a piece of plastic wrap directly against any sliced edges to keep the crumb from drying out. Stored properly, it stays fresh for up to five days.

The good news? The flavor actually gets better on day two.

    Can You Freeze It?

Absolutely. The unfrosted cake layers freeze beautifully.

Let the baked layers cool completely. Wrap each one tightly in a double layer of plastic wrap, then place them in a large freezer bag. They’ll keep well for up to three months.

When you’re ready to use them, just move them to the refrigerator the night before and let them thaw slowly overnight.

    A Note on Serving

Don’t serve this cake straight from the fridge.

Cold cake tastes dense and a little flat. Pull the frosted cake out and let it sit on the counter for at least one full hour before slicing. The cake softens, the frosting loosens just slightly, and the flavors really open up.

That one hour of patience? Totally worth it.

    Frequently Asked Questions

Can I bake this in a 9×13 inch pan instead of three round layers?

Yes, it works great. Grease your 9×13 pan well and pour all the batter in. You’ll need to bake it longer. Start checking around the 45-minute mark by inserting a wooden toothpick into the center. When it comes out clean, your cake is done.

What if I only have cake flour?

You can swap cake flour for the all-purpose flour, but you’ll need to make one adjustment. Omit the cornstarch entirely. The cornstarch is only there to mimic what cake flour already does naturally. Use 3 and 1/4 cups of cake flour to keep the recipe balanced.

Can I leave out the pineapple?

The pineapple is a big part of what makes this a classic Hummingbird Cake. But if you have an allergy or just don’t like it, you can leave it out. Add an extra half cup of mashed bananas to make up for the lost moisture. If your batter still seems too thick, stir in a small splash of milk.

Why does my cream cheese frosting always turn out runny?

This almost always comes down to temperature. Here’s what to watch:

    • Your butter should be only slightly softened, not melting
    • Your cream cheese should feel cool to the touch, not warm
    • Beat the butter first until smooth, then add the cream cheese
    • Do not over-mix once the cream cheese is in. Over-beating breaks it down and releases moisture, which makes it runny

When in doubt, pop your frosting in the fridge for 15 minutes and beat it again briefly.

I hope you have the best time baking this cake. It truly is one of those recipes that feels like a little celebration every time you make it. Happy baking!
